Chilli Ginger Mocktail

Try this one for a pick me up. Chilli and ginger are made for each other and I find them to be a perfect combination in this refreshing and unusual lunchtime mocktail (or you could add a shot of vodka for an after dark version). You can make it as spicy as you like, just add more chilli - I have given the mild version below. For a less sugary version of this lovely drink, you could use fresh ginger and soda water instead of ginger beer (I've tried both and prefer the ginger beer, but I am a sweet tooth after all.)

Chilli Ginger Mocktails with fresh ginger

Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 2 servings

Chilli, ginger, lime and mint

1/2 fresh red chilli
1 lime
6 leaves fresh mint
1 knob of fresh ginger (optional)
375 mls Ginger Beer

Ready to pour

De-seed you red chilli and slice thinly lengthways.
Juice the lime and pour into two glasses with ice.
Add the mint leaves (whole), cold ginger beer (or soda water and fresh ginger) and thinly sliced red chilli.
Serve at your next luncheon gathering for something a little different. Enjoy.
