Chilli Pork Belly Slices with Fennel
I really like pork belly, but it can be a bit bland unless you add a lot of flavour. This recipe is great because it adds that flavour, but without the need for a long marinating time. You can vary the amount of chilli to your own taste.

This recipe is extremely simple it starts out with just some oil and fennel
Preparation Time: 5 minutes
Cooking Time: 45 mins - 90 mins (depending on thickness of pork belly slices - check the packet for instructions)
Makes: 4 servings (as part of a larger meal)
Oil, fennel, and chilli you could use chilli flakes, but I prefer the flavour of chilli powder
Ingredients
60ml olive oil
2 tbsps fennel seeds
2 tsps hot chilli powder (more or less to taste)
1 tbsp sea salt
8 pork belly slices (about 1kg)
Mix the oil together with the dry ingredients
Pack the slices together in the dish. You could easily make this with more slices, if you had more people to feed
Method
Preheat the oven to 170 C
Combine the oil, fennel seeds, chilli powder, and salt into the dish you'll use for the pork and mix
Rub the belly slices into the mixture on both sides, stacking them together, rind uppermost, as you go from one side of the dish to the other.
Roast the belly slices for 45 minutes to 90 minutes - this will depend on the thickness of the slices, and your packet should give you more precise cooking times.
Use tongs to remove the belly slice from the tin, and serve.
It smells lovely, and tastes even better. Its now ready to go. It would probably work well as a marinade for a barbecue
