Chilli Pork Stir Fry
This is a recipe my Dad cooked one night when I went up visit. He first made it with a home made chilli a friend gave him which was absolutely delicious, but using a shop bought chilli is also very tasty.
This dish has a bit of a kick so it probably isn't a good one for the kids, however you can always reduce the amount of chilli if needed.
Preparation Time: 10 minutes
Cooking Time: 25 minutes (15 minutes for the rice and 10 minutes for the stir fry)
Makes: 4 servings
Ingredients
500g pork diced
1 medium carrot jullienned
1/4 red capsicum jullienned
1/4 green capsicum jullienned
1/2 onion diced
1/4 brocolli chopped into 'little trees'
2 spring onions chopped into 2 cm pieces
1 tsp minced chilli
1 1/2 tsp minced ginger
2 tsp minced garlic
1/3 cup soy sauce
1 tbsp oyster sauce
1 packet egg noodles
2 cups brown rice
4 cups water
Method
Begin to cook rice using prefered method. (I use a rice cooker because it is the easiest. You just set and forget).
Heat a small amount of oil in a wok and add the vegetables.
Stir fry until just turning soft then remove from wok and set aside.
Add a little more oil if needed then add pork and stir fry until the meat is sealed.
While pork is cooking, place garlic, ginger, chilli, soy sauce and oyster sauce into a bowl and stir to combine.
Put the vegetables back into the wok with pork and toss to combine. Then add made up soy sauce mix and add to vegetables and pork.
Add eggs noodles and combine well.
Serve over brown rice and enjoy!
