Chinese Barbecue Pork Spare Ribs

Finger-licking pork ribs with tender, juicy meat that falls off the bone.



Preparation Time: 5 hours
Cooking Time: 1 hour
Makes: 4 servings

Ingredients
1.5kg pork spare ribs
steamed rice, to serve
steamed asian greens, to serve
2 spring onions, cut into 8 cm lengths and thinly sliced into strips, to garnish

Barbecue Marinade
1/2 cup hoisin sauce
3 tbsp soy sauce
3 tbsp Shaoxing rice wine
3 tbsp tomato ketchup
2 tbsp honey
4 garlic cloves, crushed
3 cm piece ginger, peeled and finely grated

Method
  • To make the marinade, combine all of the ingredients in a small saucepan and bring to a simmer. Set aside to cool.



  • Place the ribs in a large saucepan, cover with water and bring to the boil. Reduce the heat and simmer for 15 minutes. Drain and set aside to cool slightly.



  • Place the ribs in a large bowl. Pour over the marinade and toss to coat. Cover and refrigerate for at least 4 hours, or overnight.



  • Preheat the oven to 180C. Line 2 baking trays with foil and set wire racks on top.

  • Remove the ribs from the marinade, reserving the marinade, and arrange on the wire racks. Cook in the oven, basting occasionally with the reserved marinade, for 40-50 minutes or until golden-brown.



  • Serve with steamed rice and asian greens. Garnish with spring onions.
