Chinese Roasted Pork Belly 脆皮燒肉

Roasted Pork Belly has always been my must order comfort food when I visit a Chinese restaurant. However, a small portion of this belly could cost a fortune (at least for me). Therefore, I decided to share this recipe for those who love pork or have never tried this drooling recipe. Definitely try this out, it will impress and satisfy yourself and your family.

Preparation Time: 1 day
Cooking Time: 1 hour
Makes: 6-8 servings

1kg pork belly
White vinegar
Salt to cover the skin

Chinese cooking wine
White pepper
Chinese five spice powder

Boil the pork belly for 10 minutes.

Blot dry with paper towel.
Marinade with chinese cooking wine, white or black pepper, chinese five spice and salt. Use as much or as little as you like as long as they cover the pork.

Leave the pork belly in the refrigerator overnight with a piece of paper towel underneath.

Blot the water droplets.

After one night, take out pork belly and make sure all surfaces are dry.
Use a knife or something sharp to prick the pork belly.

Make a "shelter" for the pork belly using aluminium foil like this.

Brush a thin layer of white vinegar over the top and/or sprinkle some garlic powder.

Layer about 1cm of salt on top of your pork belly, you can use regular or coarse.

Bake in a preheated oven at 200 Celsius for 40 minutes.

Remove the "shelter" and the layer of baked salt. Then place it on a new sheet of aluminium foil.

Change the setting of your oven to broil and continue to bake for 10-15 minutes. Keep checking the pork to make sure it doesn't burn.

This is the end result

You can then cut it into cubes or any size that you prefer and serve with steamed rice.
