Chinese Steamed Eggplant with Minced Garlic

This simple and tasty eggplant dish is a great addition to your meal and is perfect served with rice.

Preparation Time: 10 minutes
Cooking Time: 20-30 minutes
Makes: 2servings



Ingredients
2 Lebanese eggplants
2 cloves of garlic
Salt
Oil
Soy sauce
Chopped shallots or coriander for garnish (optional)

Method
  • Wash the eggplants and cut into wedges or strips.
  • Place the cut eggplant into a bowl and sprinkle some salt and mix well. (The salt will draw out the excess moisture in the eggplants and get rid of the bitterness) - let this sit for 5-8 mins.
  • Mince the garlic and chop the shallots/coriander, set aside.
  • After 5-8 mins, rinse the eggplants with water to remove the salt. Drain well and pat dry with a paper towel.
  • Place the eggplants in the bowl or dish for steaming in.
  • Sprinkle the minced garlic over the eggplant
  • Place the dish into the steamer to steam.
  • Once cooked, remove the eggplant from the steamer
  • Heat about 1-2 teaspoon of oil in a small pan.
  • Sprinkle the chopped shallots/coriander onto the eggplants.
  • Once the oil is hot, quickly pour this over the eggplants/shallots. (Careful! As this is hot oil and will splatter when you pour this over the eggplants)
  • Pour a drizzle of soy sauce and serve!
