Chipolte Marinated Beef Stew

Chipolte adds a wonderful rich, smoky heat to this beef stew. It's a comforting, family dish that works brilliantly with dumplings or horseradish mashed potatoe.

Preparation Time: 15 minutes plus one hour chilling time
Cooking Time: 3 hours
Makes: 4 servings



Ingredients
400g stewing beef, cut into chunks
3 onions, quartered
2 leeks, chopped
4 carrots, chopped into chunky batons
5 rashers bacon, cut into pieces
500ml rich beef stock
2 tbsp tomato puree
1 tsp mixed herbs
1-2tbsp Tabasco Chipolte sauce (vary according to taste)
1 tsp Worcestershire sauce
2 tbsp flour
Salt and pepper to season
2 tsp oil


Method
  • Put the beef chunks into a bowl and mix in the Tabasco Chipolte sauce. Cover with cling film and refrigerate for an hour.
  • Remove the marinating beef from the fridge, season with a little salt and pepper and then coat in the flour.



  • Heat the oil in a heavy bottomed dish and cook the meat for 5 minutes until lightly browned.
  • Add the onion and bacon and cook for a further 3 minutes over a high heat.



  • Add the carrots and leek, cooking for a couple of minutes before adding the mixed herbs, Worcestershire sauce and tomato puree.
  • Give the stew a good stir before adding the beef stock. Bring to the boil and then lower the heat, bringing it to a gentle simmer.



  • Place a lid over the stew and allow it to simmer for 2.5-3 hours until the stew has thickened and the meat is tender.

  • Delicious dumplings added for the last 30 minutes
