Choc caramel fudge slice with cashews
A sweet treat thats good for your health
Gooey caramel fudge and cashew pieces in the middle, a nourishing base plus real, raw chocolate to top it off. Yum! An easy sweet treat to enjoy.
Meanwhile, your body gets to enjoy the beta-glucan and resistant starch provided by the oats, the omega-3 fatty acids from the flaxseeds and the high fibre content of the dates and cashews.

Ingredients
Base
1 cup rolled oats
2 tabs ground flaxseed
3 tabs coconut oil
3 tabs honey
1 tsp vanilla
Fudge
2 cups dates (diced or whole)
1 cup cashews
Chocolate topping
3 tabs coconut oil (warmed to liquid)
3 tabs cacao powder
3 tabs honey
Method
Line a square cake tin with baking paper
Pour boiling water over the cashews and dates - enough to cover.
Whizz the oats in a food processor or blender until some of the oats have broken down. Leaving some of the oats whole is fine.
Mix the base ingredients and press into the tin with the back of a spoon. Tip - soften the coconut oil in the microwave if it's hard.
Drain the dates and cashews and whizz in a food processor until it starts to form a paste. (I left some visible cashew pieces but you can keep blending if you prefer.)
Spread and smooth down the cashew and date fudge paste over the base. Tip - Using a wet spoon stops it sticking,
Mix the chocolate ingredients together and pour over the fudge layer.
Put into the fridge to set.
Cut into 5 x 5 rows and store in the fridge.
