Choc Chip Coffee Ice Cream
While ice cream used to be a childhood treat for many, this choc chip coffee ice cream, with its rich dark chocolate and intense coffee flavour, is anything but childlike.
This recipe is extremely simple and quick to prepare, literally the hardest part is waiting for the ice cream to set, and best of all, the base recipe of cream, sweetened condensed milk and vanilla can be used as the base for almost any flavour combination you can think of.
Preparation Time: 10 minutes.
Cooking Time: 4 hours freezing time.
Makes: 1kg of ice cream.
Ingredients
500ml thickened cream
1 can sweetened condensed milk
2 tsp vanilla extract
50g good quality dark chocolate
1/4 cup cocoa powder
2 tbls instant coffee, dissolved in 2 tsp of warm water, cooled to room temperature.
Method
Roughly chop the chocolate into small chunks and set aside.
In a large bowl beat together the cream, sweetened condensed milk and vanilla until soft peaks form.
Sift the cocoa powder over the cream and milk mixture and beat on a low speed until just combined. Add the cooled coffee and beat lightly.
Add the chocolate bits to the ice cream, stir and place in a freezer safe bowl or tin.
Allow to set in the freezer for 4-5 hours before serving.
