Choc Hazelnut Rock Cakes
Rock cakes are at the heart of an English kitchen and only require a few simple ingredients. Most of which you probably have on hand. They are the perfect bite size snack. Crispy on the outside, moist on the inside.
Use this recipe for a basis of your own imagination. Instead of chocolate and hazelnut maybe try adding dried fruit, different nuts or spices.
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Makes: 18 servings
Ingredients
2 cups (300g) self-raising flour
1/4 teaspoon ground cinnamon
1/3 cup (75g) caster sugar
90g butter, chilled and chopped
1 cup chocolate chips (dark, milk or white chocolate)
1/2 cup crushed hazelnuts
1 egg
1/2 cup (125ml) milk
1 teaspoon vanilla extract
1 tablespoon caster sugar, extra
Method
Preheat oven to 200°C (180°C fan-forced).
Line oven trays with baking paper or grease with butter or oil.
Sift flour, cinnamon and sugar into a bowl.
Using fingertips, rub in butter until the mixture resembles breadcrumbs.
Stir in crushed hazelnuts, chocolate chips, egg, vanilla extract and milk. Be careful not to over mix.
Place tablespoons of the mixture about 5cm apart onto lined trays.
Sprinkle with extra sugar.
Bake rock cakes for 15-20 minutes or until lightly golden.
Cool on trays and enjoy!
