Choc Hazelnut Rock Cakes

Rock cakes are at the heart of an English kitchen and only require a few simple ingredients. Most of which you probably have on hand. They are the perfect bite size snack. Crispy on the outside, moist on the inside.

Use this recipe for a basis of your own imagination. Instead of chocolate and hazelnut maybe try adding dried fruit, different nuts or spices.



Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Makes: 18 servings

Ingredients
2 cups (300g) self-raising flour
1/4 teaspoon ground cinnamon
1/3 cup (75g) caster sugar
90g butter, chilled and chopped
1 cup chocolate chips (dark, milk or white chocolate)
1/2 cup crushed hazelnuts
1 egg
1/2 cup (125ml) milk
1 teaspoon vanilla extract
1 tablespoon caster sugar, extra

Method
  • Preheat oven to 200°C (180°C fan-forced).
  • Line oven trays with baking paper or grease with butter or oil.
  • Sift flour, cinnamon and sugar into a bowl.
  • Using fingertips, rub in butter until the mixture resembles breadcrumbs.




  • Stir in crushed hazelnuts, chocolate chips, egg, vanilla extract and milk. Be careful not to over mix.



  • Place tablespoons of the mixture about 5cm apart onto lined trays.
  • Sprinkle with extra sugar.



  • Bake rock cakes for 15-20 minutes or until lightly golden.
  • Cool on trays and enjoy!
