ChocChip and Nut Brownies
Brownies have to be one of life’s simple (yet sometimes guilty) pleasures. And it’s not easy to stop at just one. If you are trying to lose weight, this is not the recipe for you. But, if you are nursing a broken heart, then this is the perfect remedy. Or if you have friends coming over for afternoon tea, make an extra batch because they will disappear before you have a chance to say “coffee anyone?”
Chocolate Brownies also make a great gift. Package them in a nice box and present them proudly to your best friend for her birthday.
They are very easy to make and if you have children, why not get them involved. They will love getting messy and licking the spoon and bowl.

Makes: 20
Ingredients
125g butter
200g milk or dark chocolate, chopped
3 eggs
1.5 cups caster sugar
1 teaspoon vanilla essence
1.5 cups plain flour
1/3 cup cocoa powder
1.5 cups walnuts
1.5 cups choc bits
Method
Step 1
Preheat oven to 180 degrees C.
Brush a shallow 20 x 30cm tin with oil or butter and line the base with baking paper, extending it over two sides
Step 2
Melt the butter and chocolate in a heatproof bowl over a pot of simmering water. Stir occasionally.
Step 3
Add the eggs and sugar gradually, beating well after each addition. Add vanilla essence
Step 4
Add the flour and cocoa powder and mix well
Step 5
Mix in nuts and choc bits until combined
Step 6
Pour the mixture into the prepared tin and bake for 30 minutes.
Step 7
Allow to cool in the tin before cutting into pieces.
Did I mention chocolate brownies taste really good with ice cream. They can also be served with whipped cream or heated custard or decorated with melted white chocolate and walnut halves.
