Just because you're eating healthy it doesn't mean you can't indulge every once in a while, and just because you choose to indulge, it doesn't mean your diet needs to go out the window.
Thickened with cornflour, not eggs and cream, these chocolate almond milk puddings are decadent and silky smooth with a rich dark chocolate flavour, making them the perfect little treat for when you're watching what you eat.
Preparation Time: 5 minutes
Cooking Time: 5-10 minutes
Makes: 4 servings
Ingredients
1 ½ cups original almond milk
3 tbls cornflour
¼ cup sugar
1 tbls thickened cream (optional)
¼ cup cocoa powder
1 ½ tbls instant coffee dissolved in 1tsp boiling water
Method
Place ½ cup of the almond milk into a small bowl. Add the cornflour and stir until the cornflour has dissolved. Set aside.
Place remaining almond milk as well as the sugar, cocoa, cream and coffee into a pot over a medium-low heat, whisk until the cocoa and sugar have dissolved and the mixture is gently simmering.
Turn the heat up to medium and add the almond milk and cornflour mixture to the pot. Continue whisking for another 2-4 minutes or until the pudding reaches a thickened cream consistency.
Portion the pudding out into four glasses or ramekins and allow to set in the refrigerator for 2-3 hours.
