Chocolate and Chili Salted Cashew Mousse
Chocolate and chili is a "match made in heaven".
I was having a visitor so I was a bit wary about adding too much chili so I only added half of what I originally wanted to. It had a hint of chili, and I also used salted cashews. Add a dollop of cream and hmmmmmm - delicious!
Preparation Time: 10 minutes plus 10 minutes standing
Cooking Time: 3 minutes
Serves: 3 - 4
Ingredients

½ tsp ground cinnamon
½ tsp dried chili flakes
30 g roasted salted cashews
3 medium eggs, separated
3 tbsp honey
Method
Roughly break up the chocolate and melt it in the microwave or put it over a pan of simmering water.
As it is melting, add the dried chili and cinnamon, take the pan off the heat, and stir until it is smooth.
Let it stand for 10 minutes.
Blend the cashews until they are a powder - I did not do them too fine as I like the taste of them.
Beat the egg yolks and honey in a bowl and stir in the chocolate and ground cashews.
Stir until smooth.
Beat the egg whites, making sure beaters or hands are not wet, until they form soft peaks, and gently fold this into the chocolate mixture.
Transfer into 3 or 4 dishes and chill till needed - best to do this at least an hour before you want to eat it.
I then topped it with a very thick cream, and it was "to die for"! My visitor does not usually eat desserts, but ate this one all up in minutes.
