Chocolate and Chili Salted Cashew Mousse

Chocolate and chili is a "match made in heaven".

I was having a visitor so I was a bit wary about adding too much chili so I only added half of what I originally wanted to. It had a hint of chili, and I also used salted cashews. Add a dollop of cream and hmmmmmm - delicious!

Preparation Time: 10 minutes plus 10 minutes standing
Cooking Time: 3 minutes
Serves: 3 - 4

Ingredients

½ tsp ground cinnamon
½ tsp dried chili flakes
30 g roasted salted cashews
3 medium eggs, separated
3 tbsp honey

Method
  • Roughly break up the chocolate and melt it in the microwave or put it over a pan of simmering water.

  • As it is melting, add the dried chili and cinnamon, take the pan off the heat, and stir until it is smooth.

  • Let it stand for 10 minutes.

  • Blend the cashews until they are a powder - I did not do them too fine as I like the taste of them.


  • Beat the egg yolks and honey in a bowl and stir in the chocolate and ground cashews.


  • Stir until smooth.

  • Beat the egg whites, making sure beaters or hands are not wet, until they form soft peaks, and gently fold this into the chocolate mixture.


  • Transfer into 3 or 4 dishes and chill till needed - best to do this at least an hour before you want to eat it.

  • I then topped it with a very thick cream, and it was "to die for"! My visitor does not usually eat desserts, but ate this one all up in minutes.
