Chocolate and Coconut Slice
I remember having these as a kid at parties and school functions and they've always been a soft spot in my memories. This soft and sweet slice is the perfect combination of rich chocolate and coconut that smells just as amazing it tastes!
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 18 servings
Ingredients
Slice:
150g butter, melted and cooled
1 cup firmly packed brown sugar
1 large egg, lightly beaten
1 teaspoon of vanilla extract
1/2 cup of plain flour
1/3 cup self raising flour
1/4 cup cocoa
1/2 cup desiccated coconut
Icing:
1 1/2 cup icing sugar
1/4 cup cocoa
30g butter, finely chopped
2 tablespoons boiling water (extra water can be used if the icing is too thick, or extra cocoa if its too thin)
Method
Preheat the oven to 180 degrees C (for a conventional oven).
Grease a 20x30cm lamington pan and line with greaseproof paper.
Place the butter, sugar, egg and vanilla in a large bowl and stir until combined.
Sift the flour and cocoa into the liquid mixture. Add the coconut and stir through.
Spread evenly into the pan.
Place the slice into the oven and bake for 25-30 minutes, or until just firm. Set aside.
Sift icing sugar and cocoa into a bowl.
Add butter and boiling water, stir until combined.
Spread the warm slice with icing.
Sprinkle the remaining coconut and refrigerate for at least an hour before removing from the pan and slicing.
