Chocolate and Fig Balls
Chocolate and fig are a match made in heaven. These balls are super delicious, full of iron, have the goodness of oats and are a cinch to make. They taste similar to fudge brownies and pack a punch of protein. Best of all they can be kept on the bench and at less then 50 cal per ball you can have more than one at a time!
I love the crunch from the fig seeds
Preparation Time: 15 minutes
Cooking Time: 0 minutes
Makes: 18 balls
Ingredients
1 cup dried figs
½ cup water
1 cup oats
1 scoop vanilla protein powder
¼ cup cocoa powder
2 tbsp dark chocolate chips
Method
Either add the figs and water to a large microwave-safe bowl and microwave on HIGH for 1 minute or boil water, pour it over the figs and let them soak for 5 minutes or until the figs are plump as seen below.
Dry fig vs hydrated
Let the figs cool for 5 minutes then blend them with 2 tbsp of the fig water. Pulse until you have a smooth paste, add more water if needed.
Let the mixture cool completely to room temperature before adding to the dry mix. You can place the paste in the refrigerator to speed up the process.
In a seperate bowl add the oats, vanilla protein powder and cocoa powder and stir until combined.
Mix the fig paste into the cocoa mix until it come together. Add more of the fig water if needed.
Finally stir through the chocolate chips and shape into balls. I made 18 larger balls but make whichever size you like!
Store these in an airtight container at room temperature for up to 4 days—if they last that long!
