Seriously delicious, quick and flour free. I blend most of the macadamias into a paste and then blitz in some extra so they have a little bit of crunch.
I made this batch as thank you gifts but they taste great anytime. I have to hide them if they are to make it past the cooling period as they are irresistible. They are low FOODMAP, gluten, lactose free.

Delicious and quick chocolate macadamia cookies
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 32
Ingredients
2 cups macadamias, unsalted
1 cup brown sugar
2 tbsp cacao or cocoa powder
1 tsp baking powder
1 egg
1 tbsp vanilla essence
1/4 cup cacao or chocolate chips
Method
Preheat oven to 180C. Line 2 - 3 baking trays with baking paper.
Blend 1 1/2 cups macadamias, vanilla essence and sugar until smooth.

The mixture will be smooth when combined
Add egg, baking powder and blend to combine.
Add 1/2 cup macadamias. Blend for 30 seconds so the mixture is combined but still has a bit of texture.

I like a bit of texture in the cookies
Add the cacao powder and chips and blend for 20 seconds until just combined.
Place tablespoon sized dough balls 4 cm apart on the baking trays and press down slightly to flatten.

Dough balls
Bake for 10 minutes or until golden and cool on a cooling rack. Enjoy!
