Inspired by Paul Hollywood's chocolate and prune tart, I've made a chocolate and prune cheesecake, altering a few things here and there to make it sweeter, but less fattening.
Preparation Time: 2 hours 45 minutes
Cooking Time: 35 minutes
Makes: 8 servings
Ingredients
175g wholemeal plain flour
2 tbsp Truvia sweetener (or 60g caster sugar)
1 tbsp cocoa powder
100g margarine
3 eggs
200g prunes
2 tbsp brandy
100ml boiling water
1 tsp vanilla extract
75g milk chocolate
125g creme fraiche
200g cream cheese
Method
Soak the prunes in a blend of boiling water and brandy for two hours.
Mix together the flour, cocoa powder, margarine, sweetener/sugar, and one egg to create a dough.
Chill the dough in the fridge for 10 - 30 minutes, and then roll it out into a tart tin.
Blind bake for 15 minutes in an oven pre-heated to 200 ༠C/ 180 ༠C fan/400 ༠F/6 Gas.
Melt the chocolate over a pan of boiling water, and then stir in the creme fraiche, and allow the ganache to cool.
Stir in the cream cheese until fully incorporated.
Beat two eggs with vanilla extract, and then beat into the chocolate mixture.
Drain the prunes, then stir them into the mixture.
Pour the mixture into the tart tin and bake at 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas for 20 minutes.
