Chocolate Brownie Ice Cream

This is the second time I have made ice cream ever. Well the second time I have made it and succeeded in making it work, and for this recipe you don't even need an ice cream churner.

Chocolate Ice Cream with Brownie Chunks

Preparation Time: 10 minutes
Cooking Time: Freeze for five hours.
Makes: 1 loaf tin/ 8 individual muffin tins

Ingredients
2 chocolate brownies (homemade or store bought)
3 tablespoons of raw cacao or cocoa powder
2 cups of thickened cream
1 can of condensed milk

Method
  • With an electric mixer whip the cream until stiff peaks form.

  • Cream looks like this when stiff peaks have formed

  • Turn off the mixer and add in the condensed milk.
  • Fold the mixture with a spatula until the mixture is well combined.

  • Mixture will be this consistency when the condensed milk has been stirred through

  • For the brownie, cut it into small chunks and set aside.
  • Add the cocoa powder to the mixture and stir through until well combined.
  • Add the brownie chunks and lightly mix through.

  • Brownie cut into chunks

  • To set I use some individual muffin tins, or you can pour the while mixture into a loaf tin.
  • Place some alfoil over the ice cream to cover each tin.
  • Place the ice cream into the freezer and allow to set for 5 hours.
  • With the small tins the ice cream is set and easy to scoop after 4 hours.
  • If the whole amount is set in a loaf tin it needs at least five hours to set.

  • Individual Ice Cream frozen and ready to serve
