Chocolate Candied Oranges
If you have a sweet tooth, this is a simple to make, yet delicious treat.

Cooking Time: 1 hour 15 minutes
Resting Time: 4 hours
Makes: 2 cups
Ingredients
6 Valencia or Navel oranges
4.5 cups sugar plus extra for rolling
1.5 cups water
350g milk or dark dhocolate
Method
Cut the top and bottom of all oranges and using a vegetable peeler.
Peel the skin into strips. Each strip should be approximately 0.5cm - 1cm wide.
Place the orange peel in a large saucepan with cold water and bring to boil over high heat.
Pour off the water. Repeat one or two more times to reduce bitterness.
Remove the orange peels from the pan.
Whisk the sugar with 1.5 cups water.
Bring to simmer and cook for 9 minutes.
Add the peels and simmer gently until the peels are translucent, approximately 45 minutes.
Do not stir the peels or you may introduce sugar crystals into the syrup. If necessary, swirl the pan to move peels around.
Drain the peels, then roll them in sugar and let them dry on a rack for 4 hours.
Melt chocolate in microwave for approximately 60-90 seconds
Dip the ends of the orange peel in melted chocolate.
Let the peels cool on a rack or place in the fridge until chocolate sets.
