A low fat, high protein tasty snack for after school or a post workout treat.

Preparation Time: 10 minutes
Setting Time: 30 minutes
Makes: 15-20 servings

Ingredients
1 cup rolled oats or quick oats
1/2 cup rice puffs
3/4 cup pitted dates
2 tbsp cocoa powder or 1/2 cup chocolate protein powder
4tbsp Stevia sweetener
1/2 cup cottage cheese (2%)
1/2 cup skimmed milk powder
1/4 cup water
1/4 cup sesame seeds (optional)

Method
  • Place all ingredients except for oats and sesame seeds in a blender and blend until combined. Alternatively, mix in a bowl and chop the dates finely.
  • Transfer the mixture to a bowl and mix in the oats. You are looking for a firm but still tacky mixture.
  • Add more water if it's too dry or more oats if too sticky.
  • Using a teaspoon, scoop a small amount of the mixture and roll into a ball. If desired, roll the ball in the sesame seeds and place onto a tray lined with grease proof paper. Repeat with the rest of the mixture.
  • Place the tray into the fridge and set for at least 30 minutes.
