This cheesecake has a chocolately texture which combines wonderfully with cherries to obtain a beautiful dessert.
A comment from my hubby was "Now, that's what I call a dessert!"
Preparation Time: 15-20 minutes
Cooking Time: 60 minutes
Makes: 6-8 servings
Ingredients
240g crushed chocolate wafers
1/2 cup melted butter
340g semi-sweet chocolate chips
1 1/2 cup heavy cream
450g softened cream cheese
1/4 cup sugar
4 large eggs
1 tsp vanilla extract
500g cherry pie filling
Method
Preheat oven to 150C and lightly grease a 24cm (base measurement) springform pan.
In a grinder, crush chocolate wafers with butter and mix.

Pat firmly into a spring-form pan while covering the bottom and chill.

Melt chocolate chips over hot water and mix in cream. Stir until you obtain a smooth mixture.

In another bowl, beat cream cheese and sugar until creamy.

Add eggs one at a time, beating well after each addition.

Add eggs, one at a time and mix
Mix in chocolate mixture and vanilla and pour into prepared crust.

Mix together chocolate mixture and cream cheese mixture
Bake at 150C for 60 minutes.
When done, turn oven off and leave to stand with the oven door ajar.
Remove from oven and leave to cool off completely before chilling in the fridge for 24 hours.
Spread cherry pie filling over the top and serve.
