Chocolate Chip Cookie Dough Ice Cream
I recently bought an ice cream maker and this was the first (of many to come) batch of homemade ice cream. This ice cream is rich with plenty of cookie dough throughout. Using brown sugar in the custard makes the base taste like cookie dough too.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 1.5 quarts (1.4 L)
Ingredients
For the ice cream
2 cups cream
1 cup milk
1/4 cup granulated sugar
1/2 cup light brown sugar
4 egg yolks
1 tsp vanilla extract
For the chocolate chip cookie dough
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
1/2 cup light brown sugar
1/2 tsp vanilla extract
1 cup flour
2 tbsp milk
1/2 cup chocolate chips (I used dark)
Method
Put 1 cup of cream in a large bowl, set aside.
In a saucepan, combine 1 cup cream, milk and sugars.
Cook over medium heat, stirring frequently until the sugars dissolved and the mixture starts to steam.
Remove from heat.
Whisk egg yolks in a medium bowl.
Slowly pour in some of the warm cream mixture (around 1/3 cup at a time) until half of it is incorporated.
Pour egg mixture back into saucepan and cook on medium heat, stirring frequently until it thickens for around 6 minutes. Don't let it boil or the eggs will curdle.
Pour mixture through a fine sieve into 1 cup of cream.
Stir in vanilla and let it cool to room temperature, then refrigerate for at least 2 hours.
To prepare the cookie dough, combine melted butter, sugars and vanilla in a medium bowl.
Add flour, stir until completely mix.
Stir in chocolate chips.
Form the cookie dough into marble sized balls.
Add the ice cream base into an ice cream machine and churn according to manufacturer's directions. Stir in the cookie dough and pour the mixture into an airtight container then refrigerate for a few hours to firm.
If you don't have an ice cream machine, put the ice cream base in the freezer for 2 hours then beat it using a mixer until it becomes creamy. Repeat this for 2 more times before mixing in the cookie dough.
