Chocolate Chunk Meringue Cake

A light, delicious pudding that's easy to make and will quickly become a family favourite. The meringue is crisp and crunchy on the outside, soft and gooey inside with bursts of chocolate throughout.



Preparation Time: 15 minutes
Cooking Time: 1.5 hours
Makes: 8 servings

Ingredients
Meringue
4 egg whites
200g caster sugar
100g roughly chopped dark chocolate

Cream filling
250ml whipping cream
1 tsp vanilla essence
1 tbsp icing sugar


Method
  • Preheat oven to 140c, 120c for fan ovens. Line two baking trays with non stick baking paper.
  • Using an electric whisk, beat the egg whites until stiff.
  • The egg whites will bubble and turn opaque when first whisking

    After a few minutes, the egg whites get firmer

  • Slowly add in the sugar and whisk until firm and glossy.


  • Add the chopped chocolate and stir through gently.

  • Divide the mixture between the two lined baking trays, gently easing the mixture into circles.

  • Bake in the oven for 1.5 hours. Remove from the oven and leave to cool completely before removing from baking tray.

  • Pour the whipping cream and vanilla essence into a bowl and beat with an electric whisk until the whisk leaves a pattern in the cream.
  • The runny cream will slowly firm up


  • Add the icing sugar and gently stir through. Leave in the fridge until ready to assemble cake.

  • Place one meringue circle onto a plate, spread the whipped cream across the meringue and then gently place the second meringue circle on top.


  • Serve at room temperature.
