These bliss balls are delicious and use dates as a sweetener instead of a refined sugar and I also used healthy raspberries. They are basically a raw dessert as the only cooking is if you cover them in chocolate which is optional.
They will still taste great without the chocolate, as the raspberries are sour and the dates give it a sweetness - I would term them sweet but tart.
Great for those on a diet with a sweet tooth!
Preparation Time: 20 minutes
Cooking Time: 5 minutes to melt chocolate only
Serves: About 18 balls (depending on how big you make them)
Ingredients ½ cup desiccated coconut
1 cup almonds
1 cup frozen raspberries
3 - 4 dates, pitted
For the chocolate coating (optional)
About 50 g dark chocolate
1 tsp coconut oil
Put the almonds in a blender and blend - I did mine in chunks rather than a fine powder, however either is OK.
Add the coconut, raspberries, and dates and process or blend until it is well combined - this should only take up to a minute, depending on your blender or processor.
Roll into small balls, and put in the fridge for an hour or more to set.
For the chocolate coating
Melt the chocolate - I always do this in the microwave and using this chocolate.
Add the coconut oil and mix.
Prepare a tray with baking paper.
Using a toothpick and a spoon, roll the raspberry balls gently in the chocolate, and let the excess drip off.
Place on the baking paper, and put back in the fridge to set.
You could also coat them in crushed nuts, coconut or cacao, or leave them as is.
Great in lunch boxes, as a snack, and with tea or coffee.
I tried working out the calories on these and I THINK they are about 55 without the chocolate, and about 75 calories with the chocolate coating.
