Chocolate Cranberry and Walnut Slice

I have a MASSIVE sweet tooth and I find it hard to eat clean and healthy when all I really want to do is snack on a chocolate bar... BUT after several failed attempts I found that this slice works perfectly to stop the cravings for something sweet and still stick to a Paleo diet.

Preparation Time: 10 minutes
Cooking Time: 2-3 hours
Makes: 36 servings

Ingredients
1 cup of all natural peanut butter (can be smooth or crunchy- I prefer crunchy),
1/2 cup of dried cranberries,
1/2 cup of walnuts, roughly chopped,
3 teaspoons of vanilla extract,
6 tablespoons of maple syrup,
3 tablespoons of desiccated coconut,
5 tablespoons of coconut oil- melted,
3 tablespoons of cacao (can use cocoa if preferred)
1/4 cup of desiccated coconut (for sprinkling).

Method
  • Grease a baking tray and line with greaseproof paper.
  • In a large bowl, combine all ingredients until well incorporated.

  • Spoon the mixture into the tray and spread as evenly as possible.
  • Sprinkle the coconut evenly over the slice.

  • Cover with cling wrap or foil and place in the freezer for 2-3 hours or until set.
  • Using a sharp knife, cut the slice into 36 pieces.
  • Store in a container in the freezer as it does become soft and slightly sticky when left in the refrigerator.
