Chocolate Cranberry and Walnut Slice
I have a MASSIVE sweet tooth and I find it hard to eat clean and healthy when all I really want to do is snack on a chocolate bar... BUT after several failed attempts I found that this slice works perfectly to stop the cravings for something sweet and still stick to a Paleo diet.
Preparation Time: 10 minutes
Cooking Time: 2-3 hours
Makes: 36 servings
Ingredients
1 cup of all natural peanut butter (can be smooth or crunchy- I prefer crunchy),
1/2 cup of dried cranberries,
1/2 cup of walnuts, roughly chopped,
3 teaspoons of vanilla extract,
6 tablespoons of maple syrup,
3 tablespoons of desiccated coconut,
5 tablespoons of coconut oil- melted,
3 tablespoons of cacao (can use cocoa if preferred)
1/4 cup of desiccated coconut (for sprinkling).
Method
Grease a baking tray and line with greaseproof paper.
In a large bowl, combine all ingredients until well incorporated.
Spoon the mixture into the tray and spread as evenly as possible.
Sprinkle the coconut evenly over the slice.
Cover with cling wrap or foil and place in the freezer for 2-3 hours or until set.
Using a sharp knife, cut the slice into 36 pieces.
Store in a container in the freezer as it does become soft and slightly sticky when left in the refrigerator.
