Chocolate Croissant Bread and Butter Pudding

A delicious variation to the traditional bread and butter pudding that is rich and full of chocolate. Perfect for a cold winter night when entertaining guests.

Preparation Time: 20 minutes
Cooking Time: 35-40 minutes
Makes: 10 servings

180g caster sugar
6 large eggs
300ml thickened cream
1 vanilla bean
1 Tbsp vanilla essence
6-8 croissants
6 Tbsp nutella
50g brown sugar

The ingredients

Preheat the oven to 180 degrees C.
Slice the croissants in half lengthways.

Spread the nutella over all the halved croissants. Make sure you spread on a good amount, the more nutella, the better it tastes.

Layer the croissants, overlapping each other, into a large baking dish (chocolate side facing upwards).

To make the custard, first slice the vanilla bean into thin diagonal strips and put into a large bowl.

Add in the caster sugar, eggs, cream, milk and vanilla essence and whisk together well. You don't want to have any large chunks of egg in your custard.

Pour the custard mixture over the top of the layered croissants so that most are covered. Leave for about 15 minutes to allow the croissants to soak up the custard mixture.

When soggy, sprinkle the brown sugar over the top and bake in the oven for 35-40 minutes until the custard has set.

Ready for the oven.

Serve with ice cream!
