If death is the result of eating this cake, then it is a small price to pay. This flourless cake is light, but very rich and decadent. I made it for my dad for Father's Day, and is probably best saved for special occasions. Based on the brands I used, each slice is about 226 calories.

Ingredients
500g 70% Belgian chocolate
130g margarine
80g creme fraiche
60g Truvia sweetener (or caster sugar if you prefer)
5 eggs
1/2 tsp vanilla extract
Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Break up 300g of the chocolate and melt in a bowl over boiling water.
Stir in the butter until it forms a smooth ganache.
Beat the eggs with vanilla extract and sweetener/sugar until it has a ribbon like effect.
Gradually fold the eggs into the ganache until fully incorporated.
Pour the mixture into a cake tin and bake in the oven.
Melt the rest of the chocolate over boiling water, then stir in the creme fraiche to form a thick ganache.
Use a spatula to spread the ganache over the top and sides of the cake, then leave to cool and set.
