Chocolate Dipped Low Fat Peanut Butter Bliss Balls
These are quite rich and therefore low calorie as you cannot eat many!
They are made with nothing artificial and no added sugars.
Great in lunch boxes, or as a snack with a cup of hot coffee, and little guilt goes with these delights!

Serves: 25 balls
Ingredients
For the balls
1 cup raw cashews
1 cup rolled oats
About 2 tbsp honey or sweetener of choice
Less than ½ cup peanut butter
1 tsp vanilla
1 tbsp water
For the chocolate coating
1 tbsp cacao (or cocoa
2 tbsp coconut oil
¼ tbsp honey
Method
For the balls
Put the cashew and oats in a processor and blitz until crumbly.
Add honey, peanut butter, vanilla and water and blitz until well combined.
Roll into about 25 balls and place on a tray lined with baking paper and put in the freezer to set.
For the coating
Mix all the ingredients together until smooth.
Remove the balls from the freezer and dip each one half way into the chocolate mixture.
Put each one back onto the baking paper tray to set.
Once they have cooled, repeat the dipping process again so that each has two coatings of chocolate.
Put into the fridge or freezer to set.
Store in the fridge or freezer.
