Chocolate Lime Cake
Chocolate and lime go very well together. This is my own recipe I made for a colleague's birthday party at work, and it is lovely and creamy
Preparation Time: 1 hour 10 minutes
Cooking Time: 30 minutes
Makes: 12 - 16 servings
Ingredients
200g dark chocolate
300g White chocolate
300g creme fraiche
100g margarine
100g muscovado sugar
75g self-raising wholemeal flour
50g ground almonds
5 eggs
2 limes
Chocolate balls for decorating (optional)
Method
Zest and juice the limes.
Melt the dark chocolate over a pan of hot water, stir in the margarine, and then allow to cool.
Separate the eggs, beat in the sugar, and then stir into the chocolate ganache, along with the lime zest and half the juice.
Fold in the flour and ground almonds.
Whisk the egg whites to stiff peaks and then fold into the mixture.
Divide the mixture into two sandwich tins and bake in the oven for twenty minutes.
Melt the white chocolate over a pan of hot water, stir in the creme fraiche, and then put the ganache in the fridge for 30 minutes - 1 hour.
Turn one of the cakes upside down and spread 1/3 of the ganache over the top.
Place the other cake on top.
Cover the cake in the remaining white ganache, and decorate with chocolate balls.
Put in the fridge to set.
