Chocolate Log

Chocolate Log wrapped and ready to eat

This cute little chocolate log will be the jewel in the crown of our home made Christmas Gift Hampers this year. Actually, it would make a great present any time of year, especially for anyone with sweet tooth out there. The hint of brandy adds a cheeky touch to this somewhat decadent treat. You could also experiment using different dried fruit and nuts in this recipe.

Preparation Time: 60 minutes
Cooking Time: 5 minutes
Makes: 4 servings

1/2 cup brandy
1 cup chopped dried figs
1 cup chopped glace cherries
400g dark chocolate
1/2 cup golden syrup
200g plain chocolate biscuits
1 cup pistachios
1/2 cup sifted icing sugar

- Fruit and nuts


Heat the brandy and place the chopped figs, chopped cherries and pistachios in a saucepan. Bring to boil, stirring and then turn off the heat. Let them steep for about an hour.

Add Golden Syrup to the melted chocolate

Melt the chocolate in a metallic bowl over simmering water. Remove the bowl and add the golden syrup to the melted chocolate mixture. Add the fruit and brandy mixture until well combined.

Combine the mixture together

Lay out 4 sheets of baking paper and dollop even amounts of the mixture onto this. Refrigerate until logs become firm.

Sprinkle each log with icing sugar

This part is slightly fiddly. Roll each log in sifted icing sugar, tie up the baking paper with ribbon and decorate however suits the occasion. We tied ours with string and added a little Christmas snowflake - hope the family are impressed.

Serve cut into chunky slices. Have fun and enjoy.
