Chocolate Marshmallow Slice

So simple, so delicious. Always a great hit for birthday parties. Add sprinkles or hundreds and thousands for even more impact.



Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 18-20 slices

Ingredients
¾ cup of brown sugar
2 tablespoons of cocoa
¾ cup of desiccated coconut
1 cup of self raising flour
140 grams butter
2 teaspoons of vanilla extract

For marshmallow
2 cups of caster sugar
1 ¼ cups of water
1 tablespoon of gelatine powder
Pink food colouring, optional

Method
  • Preheat oven to 180 degrees (fan forced).
  • Mix dry ingredients together.
  • Melt butter and mix into dry ingredients. Line a slice pan with baking paper. Make sure paper extends up over the sides of tray.
  • Press firmly into slice tray, using the back of spoon to level.

  • Bake for 18-20minutes. Leave in slice pan to cool.
  • While slice is cooling, prepare marshmallow. Place sugar and ¾ cup of water into a non stick pan. Bring to boil and simmer for 3-4 minutes. Sugar will completely dissolve.
  • Stir gelatine powder into remaining ½ cup of water. Warning – this will smell terrible.
  • Combine sugar and gelatine mix and whip until mixture becomes light and fluffy. Will take around 10-12 minutes. Add some food colouring if you like.
  • Before whipping

  • Spoon onto base and place in the fridge to set.

  • Leave to set then slice with a hot knife.
