Chocolate Meringue Cake

This cake has chocolate sponge, meringue, cream and almond flakes.

What more can you ask for? Despite the description however, it is not overly sweet.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 1 cake

125 g caster sugar
125 g softened butter
2 egg yolks
75 g plain flour
40 g cocoa powder
100 ml milk
1 tsp baking powder
1 tsp vanilla extract
pinch of salt

125 g caster sugar
2 egg whites
1 handful of almond flakes

300 ml heavy cream
2 tbsp icing sugar plus extra for dusting
1/2 tsp vanilla extract

Preheat oven to 180c. Line a 20x30cm rectangle baking tin with greaseproof paper.

Beat the softened butter and caster sugar until pale and fluffy. Add vanilla and egg yolks, and beat a few more seconds to combine.

Sift in plain flour, cocoa powder, baking powder and salt into the butter mixture. Mix everything together until well combined.

Loosen up the mixture by adding in milk. Fold everything together.

Transfer to the lined baking tin, spreading the batter into a thin layer.

Make the meringue. Whip up the egg whites to soft peaks then whisk in the caster sugar until it dissolves and goes glossy.

Spread the meringue mixture on top of the chocolate sponge mixture.

Scatter with the flaked almonds.

Bake for 20 minutes, then place on a cooling rack and allow to cool completely in the tin.

Whip up cream, 2 tbsp icing sugar and vanilla extract to soft peaks.

Turn the cake out carefully and cut in half.

Lay one half of the cake on the serving platter chocolate side up. Spread all of the whipped cream on top of this cake.

Top with the other half, chocolate side down. Dust with icing sugar.
