Chocolate Muffins with a Salted Caramel Topping
These are really easy to make and satisfy that craving for sweet and salty at the same time.
Preparation Time: 20 minutes
Cooking Time: 20-25 minutes at 160°C
Makes: 12 cakes
Ingredients
150g unsalted butter, softened
150g golden caster sugar
150g self-raising flour
3 large eggs
65ml soured cream
150g dark chocolate
For the topping
40g dark chocolate
260g salted caramel sauce (Marks and Spencer is perfect)
Method
Pre-heat the oven and line a muffin tin with 12 paper cases.
Break up the chocolate and melt in a bowl over a saucepan of simmering water.
Set aside to cool.
Beat the sugar and butter until light and creamy.
Gradually add the eggs with a spoonful of flour.
Fold in the remaining flour.
Combine the melted chocolate and soured cream.
Mix all the ingredients together.
Fill the muffin cases and bake for 20-25 minutes until the muffins are risen and firm to the touch.
Remove and cool on a wire rack.
To make the topping, melt the remaining chocolate as before, then leave to cool a little.
When the muffins are cool, top each one with a swirl of salted caramel sauce, drizzle with the melted chocolate, and leave for about half an hour for the chocolate to set.
