Chocolate Orange Granola Clusters

I love making my own muesli whether its bircher, museli, rawnola or granola . I like to know exactly what is in it and be able to switch up the nuts, seeds, fruits and, like now, add chocolate to keep my work day breakfasts interesting.

I like mine chunky


Preparation Time: 10 minutes
Cooking Time: 40-50 minutes
Makes: 10 servings

Ingredients
4 c rolled oats
1 orange
1/4 c cocoa powder
1/4 c sesame seeds
1/2 c shredded coconut
2 tbsp coconut oil
1/2 c almonds
1/2 walnuts
3 tbsp agave or honey (more if you like a sweeter cereal)
1 egg white
Pinch of salt (optional)



Method
  • Place the oats, coconut, sesame seeds and chopped nuts in a large bowl.

  • In a separate bowl mix together the coconut oil, juiced orange and cocoa then add it to the bowl of dry ingredients.



  • Whisk up the egg white until it is light and fluffy and pour over the mix.

  • Mix well then pour onto a lined baking tray.

  • Bake in the oven at 180C for 40-50 minutes. If you like your granola in big clusters like me use a spatula to flip the granola over at the 20 minute mark. If you like it all crumbly then stir with a wooden spoon every 10 minutes or so.



  • The granola is ready when the kitchen starts to smell like jaffa!



  • NOTE: Store in an airtight container for 2 weeks.
