A while ago I was searching through scraps of old recipes in my kitchen, when I found a booklet all about potatoes. As I leafed through, I came across a recipe for chocolate potato cake; it may sound like a queer combination, but the flavours work very well together and it has a really interesting texture. Based on the brands I used, each slice should be about 204 calories.

Ingredients
150g self-raising flour
75g margarine
75g Xylitol sweetener (or caster sugar if you prefer)
75g new potatoes
2 tbsp cocoa powder
2 large eggs
Method
Pre-heat the oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Cream the butter and sugar together, then beat in the egg.
Mix the flour and cocoa powder together, then beat into the mixture.
Peel and chop the potatoes, then mix in.
Pour the mixture into a cake tin and bake in the oven.
