Chocolate Protein Pancakes
I'm usually not the biggest fan of pancakes, they are too sweet and I feel sick after just one or two. But I love the idea of pancakes, so had to give healthy pancakes a go. These chocolate protein pancakes are amazing, they are low in fat and sugar, and really quick to make.
I didnt feel sick after eating this whole stack and felt I could even eat more!
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 serving
Ingredients
Pancakes
1 banana
1 egg
1/2 tsp baking powder
2 scoops chocolate protein powder
1/4 cup of milk
Topping
1 tbsp natural yogurt
1/4 banana
1/4 cup raspberries
Sprinkling of cocoa
Method
Place pancake ingredients in a blender and blend until smooth. Add more milk until you have reached your desired consistency.
Pour the mixture into a hot, non-stick pan in little circles. I made mini pancakes and got 10.
Leave for about 45 seconds. Check, then flip. They really dont take long to cook. Set aside and repeat until all the batter is used.
Make your pancakes into a cute stack.
Then add desired toppings! I chose raspberries, banana, yogurt and cocoa to go with mine.
Other great toppings include ice-cream, any berry, maple syrup, [link http://recipeyum.com.au/blueberry-chia-jam/ chia jam], [link http://recipeyum.com.au/cinnamon-walnut-butter/ walnut butter], peanut butter, chocolate, or nuts.
The protein powder can be swapped for oat flour, almond meal, coconut flour, regular flour, or any other flavour of protein. Change your toppings to match the flavour.
