Chocolate Puddle Buns
Just like a molten chocolate sponge pudding, only inside a soft rich bun.
Preparation Time: 2 hours
Cooking Time: 30 minutes
Serves: 4 (or 8 if buns are shared between two)
Ingredients
450g white bread flour
½ tsp salt
7g yeast
1 tbsp Truvia sweetener (or 50g caster sugar)
120g margarine
300ml buttermilk
40ml almond milk
50g hot chocolate flakes
200g dark chocolate
Method
Mix together the flour, salt, yeast, sweetener/sugar, chocolate flakes, buttermilk, almond milk, and 40g margarine to form a dough.
Knead for ten minutes, then prove for an hour.
Divide the dough into four, roll them into large buns, and prove for another half hour.
Melt the chocolate over a pan of hot water, stir in 80g margarine, and allow to cool sand thicken.
Create a well in the centre of each bun and spoon in 1/5th chocolate ganache into the cavity.
Close up the cavity to seal the chocolate inside.
Bake in the oven for ten minutes, the cover with foil, and cook for a further fifteen minutes.
Slice the bun in half to reveal the molten chocolate filling.
Reheat the remaining chocolate ganache so that it becomes runny, and pour over the buns. Alternatively, serve with cream or custard.
