Chocolate Puddle Buns

Just like a molten chocolate sponge pudding, only inside a soft rich bun.

Preparation Time: 2 hours
Cooking Time: 30 minutes
Serves: 4 (or 8 if buns are shared between two)

Ingredients
450g white bread flour
½ tsp salt
7g yeast
1 tbsp Truvia sweetener (or 50g caster sugar)
120g margarine
300ml buttermilk
40ml almond milk
50g hot chocolate flakes
200g dark chocolate

Method
  • Mix together the flour, salt, yeast, sweetener/sugar, chocolate flakes, buttermilk, almond milk, and 40g margarine to form a dough.
  • Knead for ten minutes, then prove for an hour.

  • Divide the dough into four, roll them into large buns, and prove for another half hour.

  • Melt the chocolate over a pan of hot water, stir in 80g margarine, and allow to cool sand thicken.
  • Pre-heat oven to 210 & #3872 ;C/ 190 & #3872 ;C fan/400 & #3872 ;F/6 Gas.
  • Create a well in the centre of each bun and spoon in 1/5th chocolate ganache into the cavity.

  • Close up the cavity to seal the chocolate inside.

  • Bake in the oven for ten minutes, the cover with foil, and cook for a further fifteen minutes.

  • Slice the bun in half to reveal the molten chocolate filling.

  • Reheat the remaining chocolate ganache so that it becomes runny, and pour over the buns. Alternatively, serve with cream or custard.
