Chocolate Raspberry Mousse

Meaning 'foam' in French, mousse is a light and airy dish that can either be served as a savoury starter or sweet dessert. They are easy to make, but attractive, and make a great choice for a dinner party or a summery barbecue.

Preparation Time: 30 minutes plus freezing time.

Makes: 10 servings

Ingredients
300ml creme fraiche
½ tbsp sweetener (or 70g caster sugar)
125g dark chocolate
300g raspberries
2 eggs

Method



  • Melt the chocolate over a pan of hot water.



  • Whip the creme fraiche with sweetener/sugar.



  • Stir in the chocolate.



  • Separate the eggs and whisk the whites to soft peaks.



  • Fold into the mixture.



  • Line a small loaf tin with cling film, and then pour in half the mixture.



  • Scatter half the raspberries over the top.



  • Spread the remaining mixture over the raspberries, then arrange the remaining raspberries on top.



  • Cover the mousse in cling film and put in the freezer for between two to four hours to set.



  • Allow to thaw slightly before using the cling film to lift the mousse out of the tin, and serve.
