Chocolate Raspberry Mousse
Meaning 'foam' in French, mousse is a light and airy dish that can either be served as a savoury starter or sweet dessert. They are easy to make, but attractive, and make a great choice for a dinner party or a summery barbecue.

Makes: 10 servings
Ingredients
300ml creme fraiche
½ tbsp sweetener (or 70g caster sugar)
125g dark chocolate
300g raspberries
2 eggs
Method
Melt the chocolate over a pan of hot water.
Whip the creme fraiche with sweetener/sugar.
Stir in the chocolate.
Separate the eggs and whisk the whites to soft peaks.
Fold into the mixture.
Line a small loaf tin with cling film, and then pour in half the mixture.
Scatter half the raspberries over the top.
Spread the remaining mixture over the raspberries, then arrange the remaining raspberries on top.
Cover the mousse in cling film and put in the freezer for between two to four hours to set.
Allow to thaw slightly before using the cling film to lift the mousse out of the tin, and serve.
