Chocolate Self Saucing Pudding

Its cold outside.......chocolate pudding time! This one is pretty simple, but oh so yum. Self saucing puddings are the complete all in one dessert. However it is better with ice-cream, and pouring cream is good too.

Sometimes I put a few jersey caramels in for a chewy surprise. Whilst making this recipe I was looking for serving ideas, so I threw in a few frozen raspberries, wow!



Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 4-6 servings

60g butter
3/4 cup caster sugar
1 egg
1 1/4 cup self raising flour
2 tbsp cocoa
1/4 tsp vanilla extract
3/4 cup brown sugar (firmly packed)
1 tbsp extra cocoa
2 cups boiling water


Preheat oven to 165c, grease a 1.5 ltr ovenproof dish.
Place butter and sugar in a bowl and beat until smooth and creamy, add the egg and continue to beat scraping down the sides of the bowl as you go .


Add sifted flour and cocoa alternating with milk in several batches, until completely mixed. Spoon into the greased dish and spread evenly.


Combine extra cocoa and brown sugar and sift over the top of the batter ensuring an even cover.


Pour the boiling water all over the top of the pudding, making sure all the sugar cocoa sprinkle is covered.


Place in the oven for 45 minutes. The pudding should be spongy on the top with a rich sauce underneath. When ready, dust with icing sugar and serve. Be careful though, the sauce will be hot.
