Chocolate Semolina Porridge

This is a German breakfast which is eaten hot, or it can be left to go cold, put in the fridge, and eaten as a dessert.
Both are really nice and not too sweet.

I have added the part cacao, and I always use the organic one which is not sweet and is apparently healthy!

If you don't want the chocolate, just leave it off and eat as a normal Semolina. I have also made it plain with a chopped up banana added when cooked.

I always buy the coarse semolina which is available at some Health food stores as I find this tastes much better than the thin Supermarket ones, however either can be used.

Preparation Time: 5 minutes
Cooking Time: 8 minutes
Makes: 1-2 servings

1 1/2 cups milk
1/3 cup semolina
Dst cacao (optional)
Few sultanas
Bit of Honey or brown sugar

Put the milk in a saucepan and almost bring to the boil, stirring occasionally to stop it sticking to the bottom.

When almost boiling, take off the stove and add the Semolina.

Stir on low heat till it starts to thicken. If it is too thick, you can add more milk at this stage.

Turn off heat and add sultanas, and keep stirring sometimes so it does not form a skin.

Add a dob of butter (this makes it a bit richer), some honey or brown sugar, and then pour 3/4 into your serving bowls.

Add the cacao, if using, to the remaining Semolina in the pot and stir.

Adding chocolate

Serve while warm, or refrigerate and eat as a dessert.
