Chocolate Shortbread

A chocolate spin on an old favourite. A deliciously short and crumbly biscuit that will satisfy your afternoon cravings. Perfect with a big glass of milk.



Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 14 biscuits

Ingredients
125g butter, softened
½ tsp vanilla
½ cup caster sugar
¾ cup flour
¼ cup cocoa

Method
  • Preheat the oven to 180 degrees (fan forced) and line tray with baking paper.
  • Cream together the butter, 1/3 cup of sugar and vanilla until light and fluffy. Stir in the flour and cocoa and mix until dough forms.

  • Shape the dough into a sausage, wrap in cling film and chill until firm.

  • Unwrap and roll in the remaining caster sugar then slice and place on baking trays.

  • Bake for 15 minutes until dry and slightly darker around the side.
  • Leave on baking trays to set before turning onto a cooling rack.
  • Enjoy with a cold milk.
