Chocolate Stout Cupcakes

This is a bit of a twist on regular chocolate cupcakes. The added stout helps make the cakes smooth and rich, without being overpoweringly sweet. You can use any stout you like, different brands will give a different flavour.



Topped with a chocolate moustache, these cupcakes are perfect if you're hosting a Movember party .

Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: Approximately 18-20 cupcakes

Ingredients
1 Cup of Stout
225g Unsalted Butter
6T Brown Sugar
1 Cup Cocoa
2 Cups Plain Flour
1 1/2 Cups Caster Sugar
2 Tsp Baking Soda
2 Eggs
2/3 Cup Sour Cream
Cream Cheese Frosting

Method

  • Preheat the oven to 175ยบ.

  • Cube butter, and then place butter, stout, and brown sugar in a saucepan.



  • Simmer until butter is completely melted. Then add cocoa and whisk until smooth. Remove the saucepan from the heat.



  • Let the cocoa mixture cool slightly while you prepare the rest of the ingredients.

  • Sift flour and soda water, then mix with with caster sugar and salt in a bowl.



  • In another bowl mix eggs and sour cream.



  • Add cocoa mixture, and beat briefly. Add flour mixture, and beat briefly.

  • Fill cupcake liners 3/4 full, and place in the oven for 20 minutes. Check cupcakes are ready by sticking a skewer into the centre, if it comes out clean they are ready to come out. If cupcakes aren't ready, continue to check them in 3 minute intervals.



  • Decorate cupcakes with cream cheese frosting , they also look great topped with a chocolate moustache .
