Chocolate Tapioca Pudding
I have only recently "discovered" tapioca and it is a great dessert to make when you do not want much added sugar and therefore a low calorie dessert.
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 4
Ingredients
100 g tapioca pearls
175 g water
450 g rice milk
15 - 20 g honey
20 g cacao or cocoa
2 eggs
Method
Put the Tapioca in a bowl with the water and allow to stand for about 30 to 45 minutes.
Add the rice milk, honey, cacao and the eggs, and cook for about 15 - 20 minutes.
Stir, scraping the sides, and cook for a further 10 minutes.
Allow to cool a bit before serving.
It will usually set more once you put it in the fridge.
You can put in in one large serving dish, or straight into 4 individual dishes.
You COULD use an alternative to cacao though I use cacao as it is the healthiest, and has no added sugar.
If you like it sweet, add a bit more sweetener.
