This chocolate tart is light and fluffy with a mousse like texture. It is a great choice if you don't want something that is too rich. It is, however, quite calorific; based on the brands I used, it is about 403 calories per tart, so is best only had as an occasional treat - or shared between two.

Makes: 4 servings
Ingredients
200g plain flour
100g soya butter
4 tbsp water
40g dark chocolate
125ml light soya milk
1 large egg
25g Xylitol sweetener (or caster sugar if you prefer)
65g soya yoghurt
Method
Rub the butter into the flour for a breadcrumb like consistency.
Add the water to form a dough, then wrap in cling film and chill in the fridge for ten minutes.
Pre-heat the oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Roll out the pastry into four small tart tins, then blind bake for fifteen minutes in the oven.
Melt the chocolate over hot water, gradually stirring in the milk.
Separate the egg and beat the yolk with the sugar.
Beat the yolk into the chocolate and put on a gentle heat.
Whisk the egg white, then take the chocolate mixture off the heat and fold in the whites and the yoghurt.
Pour the mixture into the pastry cases and chill in the fridge to set.
