ChocoNana Mini Cupcakes
In my quest to eat less and less processed foods and lower the amount of sugar, food colouring and flavouring in my family's diet, I have created these sweet-tasting chocolate and banana flavoured mini cupcakes.

[ADVERT]They are simple to prepare and you could easily have little helpers in the kitchen for this one.
Be warned, they are delicious. It was difficult to photograph them because, being tiny, they cooled down very quickly and my little helpers kept coming in to sample the results!

Cooking Time: 10-12 minutes
Makes: 24 mini cupcakes
Ingredients
Cupcakes:
1 cup self raising flour
1 tablespoon cocoa powder
2 tablespoons sugar (optional, can omit if you're used to less sweetness)
1 tablespoon powdered stevia (optional)
1 ripe banana
3/4 cup milk
2 eggs
80g softened butter
Decoration (Optional):
24 natural lollies or mini chocolate buttons/smarties
Method
Prepare 2x12 cupcake mini cupcake trays with mini cupcake cases and preheat oven (160 degrees celsius for a fan-forced oven).
Mash the banana until there are no lumps

Combine flour and cocoa powder in a bowl. Add sugar and stevia and mix if using.

In a separate bowl, add eggs, butter and milk and mix until smooth.
Put banana mixture and egg mixture into flour mixture and mix until a smooth paste.

Spoon into prepared mini muffin trays, about 1 dessert spoon per case.

Bake for 10-12 minutes until cupcakes spring back to the touch.
Allow to cool before serving.
These cupcakes are great as they are, or you can choose to decorate with a natural lolly or mini chocolate buttons/smarties if you wish.
