Chorizo and Onion Potato Bake

This is satisfying comfort food, which I whipped up from my larder when asked by my children for a tasty supper. Potatoes, onion, and cheese are in most people's larder or fridge, the chorizo was Christmas leftover that I wanted to use up, but you swap in any kind of sausage, or even leave it out entirely for a vegetarian option.



Preparation Time: 15 minutes
Cooking Time: 50 minutes
Makes: 6 servings



Ingredients
5 or 6 large white potatoes
1 large onion
225g cooking chorizo sausages
150g Cheddar cheese (or other hard cheese)
50g butter
50ml milk
1tbsp Worcestershire sauce
1tbsp vegetable oil

Method
  • Preheat the oven to 180 Celsius.
  • Bring a large pot of water to boil on the hob.
  • Peel and chop the potatoes and cook them for about 20 minutes (or until ready to be mashed).
  • When the potatoes are ready drain them and then put them back in the pan. Add the milk, butter, and 75g of the cheese and mash.



  • Meanwhile, heat 1tbsp vegetable oil in a large frying pan.
  • Chop the onion and gently sweat in pre-heated oil.
  • Once the onion has started to soften, add the chorizo and cook until it starts to brown and release its orange-coloured oil.
  • Add the cooked onion, chorizo, and Worcestershire sauce to the mash and stir through.



  • Transfer all the mashed potato to a large baking dish and then sprinkle with the remainder of the cheese.



  • Bake in the oven for 20 to 30 minutes or until the cheese is golden-brown.
