Chorizo and Onion Potato Bake
This is satisfying comfort food, which I whipped up from my larder when asked by my children for a tasty supper. Potatoes, onion, and cheese are in most people's larder or fridge, the chorizo was Christmas leftover that I wanted to use up, but you swap in any kind of sausage, or even leave it out entirely for a vegetarian option.

Cooking Time: 50 minutes
Makes: 6 servings
Ingredients
5 or 6 large white potatoes
1 large onion
225g cooking chorizo sausages
150g Cheddar cheese (or other hard cheese)
50g butter
50ml milk
1tbsp Worcestershire sauce
1tbsp vegetable oil
Method
Preheat the oven to 180 Celsius.
Bring a large pot of water to boil on the hob.
Peel and chop the potatoes and cook them for about 20 minutes (or until ready to be mashed).
When the potatoes are ready drain them and then put them back in the pan. Add the milk, butter, and 75g of the cheese and mash.
Meanwhile, heat 1tbsp vegetable oil in a large frying pan.
Chop the onion and gently sweat in pre-heated oil.
Once the onion has started to soften, add the chorizo and cook until it starts to brown and release its orange-coloured oil.
Add the cooked onion, chorizo, and Worcestershire sauce to the mash and stir through.
Transfer all the mashed potato to a large baking dish and then sprinkle with the remainder of the cheese.
Bake in the oven for 20 to 30 minutes or until the cheese is golden-brown.
