Chorizo and Tomato Scrambled Eggs

This is a delicious breakfast that is quick and easy to make.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings


Ingredients
1 chorizo
4 eggs
6 cherry tomatoes
Salt and pepper to season

Method
  • Cut up the chorizo into smallish pieces. Chop tomatoes into quaters.
  • Place eggs in a bowl and lightly whisk.
  • Place chopped chroizo and tomato into a fry pan and ccok until tomatoes start to break down slightly and chorizo is cooked through.



  • Add eggs and salt and pepper and stir until cooked.
