The magic of Chorizo transforms an easy roast dinner into something special. This magical Spanish sausage is the perfect match for sometimes bland chicken. A one pot wonder that is sure to become a family favourite.
Ingredients 6 thigh fillets
2 chorizo sausages
1 sweet potato
2 small or 1 large onion
5-6 medium potatoes
1 medium sweet potato
4 sprigs of fresh rosemary
Approx 2-3 tablespoons of olive oil
Salt & Pepper
Preheat oven to 200 degrees (180 fan forced).
Cut thigh fillets in half across fillet. This stops them drying out.
Dice chorizo. Scatter chicken and chorizo in base of pan.
Peel and cut vegetables into similar sized pieces.
Scatter on top of chicken and chorizo. Place rosemary on top and generously season.
Finish with a generous drizzle of olive oil.
Place in the oven for 60-70 minutes. I like to mix about half way through, it stops the cauliflower getting too dark.
Delicious on its own or if you prefer, a light salad is a great accompaniment.
