Chorizo Fettuccine

This is a recipe I made up to hide all the good things the kids wouldn't eat. Worked a treat, the kids love it!



Preparation Time: 7 minutes
Cooking Time: 15 minutes
Makes: 4-5 servings

Ingredients
3 chorizos roughly chopped
1/4 cup spring onion diced
1/2 onion finely diced
1/4 cup red capsicum finely diced
1 tbsp mined or finely diced fresh garlic
5-6 button mushrooms roughly chopped
7-8 cherry tomatoes quartered
2 handfuls baby spinach
Fettuccine pasta
1/4 tbsp olive oil
Grated or parmesan cheese to serve

Method
  • Heat olive oil in pan on high heat then add spring onion, onion, garlic and capsicum and allow to soften slightly.

  • Add chorizos and cook for approx 5 mins.



  • Add mushrooms and mix into oil to coat well before adding tomatoes. Cook until tomatoes begin to break down slightly.



  • Put pasta onto boil. (If using pre-packaged pasta, start to boil when you are cooking the chorizos)



  • Add spinach to chorizo mixture and allow to wilt.
  • Add drained pasta and mix well to coat with oil.

  • Drizzle with olive oil.
  • Serve with grated or parmesan cheese.
