Christmas Cherry Nicecream

This Christmas Cherry Nicecream is wonderfully festive. To me cherries are the Christmas fruit and can be enjoyed both sweet or savoury, on their own or dressed up. Here I have paired cherries with a mango based Nicecream (another Australian Christmas fruit) and thrown in some spinach for true Christmas colours. If you don't like the idea of spinach in your icecream, replace with a handful of cherries for a beautiful pale red icecream.

Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 1 servings

Nicecream base
3 frozen bananas
1 frozen mango
1 handful of fresh spinach
Enough water or mylk to blend

8 cherries
1 tbsp shredded coconut
1 tsp organic cinnamon
2 small passion fruits

Place the spinach and the water in your blender and blend until smooth. This ensures there are no chunks of leaf in the final product.

Add in the frozen banana and frozen mango chunks. Blend until you have an icecream like consistancy. Stop and push down the frozen fruit as needed.

Scrape into a bowl and smooth out the top so you can decorate.

Top with the pitted cherries, coconut, cinnamon, passion fruit and whatever other toppings you love! I love adding chocolate sauce and nut butter to mine.
